When you obtain the Change Token, you may become one of the next-lowest classes: Fighter, Rogue, Mage, or Priest. Each of those classes has a variety of other classes it may vie to become, and so on. You may backtrack to one of the five starting classes if you wish, but the other classes are more powerful. Also, the four classes of Fighter, Rogue, Mage, and Priest have super-powered equivilents in the classes Warrior, Thief, Wizard, and Abbot, respectively, which are everything the beginning four are and then some.
Welp, apparently, it has always said enough to prevent anyone from wanting to go back.
There isn't much to say on class changing other than what each class can become, which ain't gonna happen. I guess, to clear up the confusion you had, I could explicitly state that a user can get to any other class with enough Change tokens, but then again, that doesn't rule out dipping back down. I could say that they could get there without returning to the beginning five classes, but then again, I already say that they are worthless and super-powered versions exist, so... well, there really isn't much I could say.

Yes, well maybe I'm just good at making things more complicated than they need to be.
If you put two opposing elements in the same tech, they just cancel each other out, right?

Almost. As far as damage is concerned, yeah, they counteract. However, you still get the healing bonus for each element as beneficial elemental effects have no counteraction.
