I'm in a fight and I have the AI set for attack first then attack second and all my nidhogg is doing is casting a defend spell and I'm getting my butt kicked.

You're casting spells because you are currently set on Automatic Standard AI.
See, when you set your AI, you must first choose Automatic or Command. After that, you select which kind. For Automatic, you have no choice but to use Standard action, but for Command, you select your specific actions afterwards.
You never selected to use Command AI. Just because you choose spells from the list beneath Command doesn't make the Command radio button any more selected.
